The Causse du Larzac, a vast limestone plateau in southern Aveyron, is inextricably linked to the epic story of the religious military orders. From the 12th century onwards, the Knights Templar settled there to cultivate the land and finance the protection of pilgrims in the Holy Land. They built remarkable fortified towns, such as La Couvertoirade and Sainte-Eulalie-de-Cernon, which served as resource centers (the commanderies). After the fall of the Order of the Temple in 1312, their possessions were transferred to the Knights Hospitaller of St. John of Jerusalem. The latter reinforced the fortifications during the Hundred Years' War, thus preserving this unique architectural heritage. Today, these stone villages still bear witness to the past power of these warrior-monks.
